Sausage Fajitas

 
WHOOHOO!!! It's here, it's here!!!
 
I can tell you, Pave is very excited its here... since I've officially finished my first semester of grad school (with a 3.75gpa thankyouverymuch) I now no longer have 'school' as an excuse not to cook....
But, bless his heart, I've only got about 12 meals that I can cook well.  So, now is time to liven' things up around here!
 
One of our favorite (and quick/easy) things to do is sausage fajitas, plus since you aren't using skirt steak (really the best thing to use steak-wise) the cost is very cheep.
 
1 package of beef sausage (or you can use kielbasa, whatever you prefer)
Onions
Peppers (green, yellow, red- again your choice)
 
We like lots of onions, and green peppers, so I usually do one of each.
 
You will cut up the sausage about 1/4 inch thick, saute in a little butter until cooked, then add the chopped up onions or green peppers.  My mom uses chunks of onions and peppers we use long slices.  Again, modify it for what you like!
 
Once the vegetables are tender, scoop some sour cream, guacamole, or salsa (or all of the above) onto some flour tortillas, and enjoy!

  1. This sounds really easy and also tasty - I've never thought of making fajitas with sausage before but I'll be my husband (OK fine and me too:-) will really love this!
